Feather Cake

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F in the steps is the modern equivalent, not the book's own figure.

  1. Grease a baking pan well, place a sheet of white paper in the bottom, and grease it again.

  2. Sift flour, baking powder, and salt together three times.

  3. Cream the butter, then add the sugar and beaten eggs alternately, beating well after each addition.

  4. Add one-third of the flour mixture and one-third of the milk to the butter mixture and beat well.

  5. Repeat with another third of the flour and milk, beating again.

  6. Add the remaining flour and enough more milk to make a soft drop batter.

  7. Stir in the vanilla and beat well.

  8. Pour the batter into the prepared pan and bake in a moderate oven (350°F / 175°C) until done.
