Creamed Fish in Shells

Ingredients

Directions

  1. Prepare canned salmon by broiling it and spreading with maltre d'hôtel butter, or serve on toast with cream dressing.

  2. Make a white sauce and heat the salmon in it, or heat the fish in water and serve with Béarnaise sauce.

  3. For salmon cutlets, cut salmon into heart or chop shapes, roll in egg and bread crumbs, and fry in hot fat.

  4. Arrange cutlets in a circle and serve with Béarnaise, Hollandaise, or Tartare sauce.

  5. Marinate salmon slices for one hour, then broil on both sides, basting with butter to prevent browning.

  6. Serve broiled salmon on a hot dish, sprinkled with salt, pepper, lemon juice, and chopped parsley, with Béarnaise sauce or lemon quarters.

  7. Simmer salmon slices in court bouillon until done, then carefully remove and cool.

  8. Cover one side of the cooled salmon with a smooth layer of mayonnaise made with jelly, colored green, and arrange diced gherkins or capers around the edge.
