Canning Fruit Baked in Oven
Ingredients
Directions
The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.
Sterilize jars and utensils.
Make a syrup by dissolving sugar in water.
Prepare the fruit as you would for cooking.
Fill the hot jars with drained fruit.
Pour enough hot syrup into each jar to fill it completely.
Run a silver spoon around the inside of the jar to remove air bubbles.
Place the jars uncovered in a 350°F (175°C) oven.
Cover the bottom of the oven with a sheet of asbestos.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
