Ingredients

Directions

The book gives no cooking times; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Make the broth

  1. In a large pot, combine the chicken, water, onion, carrots, and celery.

  2. Season with salt and pepper, then bring to a boil.

  3. Reduce heat and simmer for 1 hour until the chicken is cooked through.

  4. Remove the chicken and let it cool, then shred the meat.

  5. Strain the broth and return it to the pot.

Finish and serve

  1. Add the shredded chicken and heavy cream, then heat gently before serving.

What each ingredient does

Whole chicken
Gives the broth its body and flavor, and provides the meat that is shredded back into the soup.
Heavy cream
Adds fat for a rich, smooth texture and a creamy mouthfeel to the finished soup.
Onion
Contributes savory aromatic flavor to the broth as it simmers.
Carrots
Add gentle sweetness and flavor to the broth.
Celery
Adds aromatic, savory flavor to the broth.

The step that matters

Add the cream gently. Heavy cream can separate or curdle if it is boiled. Heating it gently over low heat keeps the soup smooth and creamy.
