What each ingredient does

Lean meat
Browns in the butter and releases flavor into the liquid, giving the gravy its savory body.
Onion
Softens and browns, adding sweetness and depth to the base.
Butter
Carries the heat and helps the vegetables and meat brown, adding richness.
Water
Extracts flavor from the browned solids during simmering to form the gravy liquid.

The step that matters

Skimming off scum after boiling. Scum rises as proteins and impurities come out of the meat when the liquid heats. Removing it keeps the gravy clear and free of off flavors.
