A Cheaper Meat Jelly

Ingredients

Directions

Make the jelly

  1. Combine the calf's foot, veal or beef, onion, carrot, parsley, spices, and ham in a pot.

  2. Add 5 half pints of water and bring to a boil.

  3. Reduce heat and simmer very slowly for 5 to 6 hours.

  4. Strain the mixture to obtain the jelly, discarding solids.

Strengthen the jelly

  1. For a stronger jelly, add more ham or bones from unboiled meat, poultry, or game.

What each ingredient does

Calf's foot
Releases gelatin as it simmers, which lets the stock set into a jelly.
Neck of veal or beef
Provides meat and collagen that add body and savory depth to the stock.
Ham
Adds salty, smoky flavor to the jelly.

The step that matters

Simmering very slowly. Keeping the liquid at a very gentle simmer lets collagen dissolve into gelatin without clouding the stock. A hard boil emulsifies fat and cloudiness into the liquid, leaving a murky jelly that sets less cleanly.

Swap the onion

How well each one fits the dish's main ingredients (veal, carrot, parsley, ham):

  1. Parsnipfits better
  2. Turnipfits better
  3. Leekfits better

Fit is the average pairing score against veal, carrot, parsley, ham. Candidates are from the same food group and used in at least 100 recipes.
