Bread Sauce with Onion

Ingredients

Directions

Make the sauce

  1. In a clean saucepan, combine the bread crumbs and onion with the new milk.

  2. Boil gently, stirring often, until the onion is tender, about 40 to 60 minutes.

  3. Press the mixture through a fine sieve.

  4. If the sauce is too thin, reduce it by boiling quickly.

What each ingredient does

Fine bread crumbs
Absorb the milk and swell as they cook, thickening the sauce into a soft body.
New milk
Forms the liquid base that the crumbs soften in and the sauce is built on.
Onion
Gives the sauce its mild savoury flavour as it softens and infuses the milk.
Butter
Adds fat for a smooth, rounded mouthfeel and richer flavour.
Cream
Adds richness and a silkier texture to the finished sauce.

The step that matters

Pressing through a fine sieve. Bread crumbs and onion must be pushed through a fine sieve so the sauce is smooth; skipping or rushing this leaves lumps and fibrous onion bits in the sauce.
