Prepare the lobster

  1. Split the lobster tail carefully.

  2. Remove the coral.

  3. Pound half of the coral in a mortar until smooth.

  4. Rub the pounded coral through a fine sieve.

  5. Set the sieved coral aside.

  6. Cut the firm flesh of the lobster into dice, at least ½ inch in size.

Make the sauce

  1. Melt enough butter to make the desired quantity of sauce.

  2. Season the melted butter with cayenne, mace, and salt.

  3. Add a few tablespoons of rich cream to the melted butter.

  4. Gradually mix a small portion of the butter mixture with the pounded coral until liquefied.

  5. Pour the coral mixture into the remaining sauce. Stir well.

  6. Add the lobster flesh.

  7. Heat the sauce gently by the fire without boiling.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Lobster coral
Gives the sauce its rich flavor and colour once pounded and sieved smooth.
Butter
Carries the seasonings and gives the sauce a smooth, rich body.
Rich cream
Adds fat and softness, making the sauce smoother and milder.

The step that matters

Heat the sauce gently without boiling. Boiling can cause cream and butter emulsions to separate, leaving the sauce greasy and grainy. Gentle heat keeps it smooth and lets the lobster flesh warm through without toughening.

Swap the mace

How well each one fits the dish's main ingredients (lobster, butter, pepper, cream):

  1. Nutmegfits better
  2. Tarragonfits better
  3. Parsleyfits better
  4. Macethe original

Fit is the average pairing score against lobster, butter, pepper, cream. Candidates are from the same food group and used in at least 100 recipes.
