What each ingredient does

Fennel
Supplies the main flavor and the bulk of the sauce.
Butter
Adds fat and richness and helps carry the fennel's flavor.

The step that matters

Drain the fennel well and mince it finely.. Residual water left on the cooked fennel would thin the butter and can make the sauce separate. Fine mincing lets the fennel blend smoothly into the fat.
