What each ingredient does

Cucumbers
Form the main body of the sauce and brown in the butter to develop flavor.
Butter
Adds fat for frying, helping the cucumbers brown and carrying flavor.
Beef broth or brown gravy
Supplies liquid and savory flavor that turns the fried cucumbers into a sauce.
Flour (in the method)
Light coating on the cucumbers that helps them brown and thickens the sauce slightly.

The step that matters

Frying the cucumbers to a fine brown. Browning through the Maillard reaction and caramelization creates the deep, savory flavor of the sauce. Undercooked cucumbers stay pale and watery, while over-browned pieces can taste bitter.
