What each ingredient does

Young cucumbers
Provide the main body and fresh vegetable flavour of the sauce once pureed.
Béchamel sauce
Forms the thick, creamy base that gives the sauce its body and coating texture.

The step that matters

Mixing the puree with béchamel without boiling again. Reboiling a sauce containing egg-thickened or starch-thickened components can break it, causing curdling or thinning. Keeping it hot but below a boil preserves a smooth, cohesive texture.
