Directions

Prepare the powder

  1. Prepare and dry the mushrooms thoroughly.

  2. Pound the dried mushrooms to a fine powder and sift it.

  3. Immediately transfer the powder into small, dry bottles and seal them tightly.

  4. Store the bottles in a very dry place to prevent moisture.

Make a sauce

  1. For a sauce, mix 1 teaspoon of the powder with ½ cup of strong veal gravy, 2 tablespoons of cream, and ¼ teaspoon of flour.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Dried mushrooms
Provide concentrated mushroom flavour once dried and ground into powder.
Strong veal gravy
Forms the liquid base of the sauce and carries the mushroom flavour.
Cream
Adds fat and richness, giving the sauce a smoother, rounder texture.
Flour
Thickens the sauce by swelling in the liquid as it heats.

The step that matters

Drying the mushrooms thoroughly. Any remaining moisture lets the mushrooms mould or spoil in storage and makes the powder clump instead of staying fine and dry. Thorough drying before pounding and sealing keeps the powder stable.

Swap the mace

The recipe marks mace as optional. How well each one fits the dish's main ingredients (mushroom, flour, veal, cream):

  1. Nutmegfits better
  2. Turmericfits better
  3. Capersfits better
  4. Macethe original

Fit is the average pairing score against mushroom, flour, veal, cream. Candidates are from the same food group and used in at least 100 recipes.
