What each ingredient does

Beef fillet
Forms the main body of the dish; lean, tender meat that is cooked as a single roast.
Butter
Basting fat that carries heat to the surface, adding richness and helping the outside brown.

The step that matters

Roasting in a brisk fire. A fillet is lean and cooks quickly, so a very hot oven browns the outside while the centre stays tender. Too long or too cool and the meat dries out and turns grey.

Swap the currant

How well each one fits the dish's main ingredients (beef, butter, tomato):

  1. Avocadofits better
  2. Cherryfits better
  3. Mangofits better
  4. Currantthe original

Fit is the average pairing score against beef, butter, tomato. Candidates are from the same food group and used in at least 100 recipes.
