Why it works: Beef and pepper are a kitchen classic. They rank in the top 10% of all ingredient pairs, and cooks put them together in 18,971 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

Ingredients

Directions

Cure the tongue

  1. Rub the tongue with a handful of fine salt and let it drain overnight.

  2. Mix saltpetre, coarse sugar, and black pepper together, then rub the mixture onto the tongue and add bruised juniper berries.

  3. After two days, add the coarse sea salt and let it sit for three more days.

  4. Pour treacle over the tongue and let it pickle for two weeks.

Smoke and finish

  1. Hang the tongue to drain, wrap it in brown paper, and smoke it over a wood fire for two to three weeks.

What each ingredient does

Beef tongue
Forms the meat that is cured, pickled and smoked into the final dish.
Saltpetre
Gives the cured meat its pink colour and helps preserve it during curing.
Coarse sea salt
Draws out moisture and seasons the meat, helping it cure and preserve.
Coarse sugar
Balances the salt and adds mild sweetness to the cure.
Treacle
Adds dark sweetness and flavour to the pickling liquid and meat surface.
Juniper berries
Adds a resinous, aromatic flavour to the cure.

The step that matters

Adding the coarse sea salt on schedule. Salt must penetrate the meat gradually over days. Adding it on the timed schedule, rather than all at once, lets the cure work evenly and reduces the risk of a salty surface with an undercured centre.
