What each ingredient does

Mutton shoulder
Provides the main meat, which becomes tender through long, gentle stewing.
Salt
Draws moisture from the meat and helps cure and season it during the long rubbing period.
Sugar
Adds sweetness to the cure and helps balance the salt and warm spices.
Beef broth
Supplies liquid for gentle stewing and forms the base of the gravy.
Onion
Adds savoury depth and aroma to the stewing liquid and gravy.

The step that matters

Stew the mutton gently. Slow, gentle heat over several hours breaks down connective tissue in the tough shoulder. Rapid boiling toughens the meat and dries the fibres, so the liquid should only simmer.

Swap the mace

How well each one fits the dish's main ingredients (mutton, sugar, clove, pepper, ginger, beef, onion):

  1. Cinnamonfits better
  2. Cardamomfits better
  3. Allspicefits better
  4. Macethe original

Fit is the average pairing score against mutton, sugar, clove, pepper, ginger, beef, onion. Candidates are from the same food group and used in at least 100 recipes.
