Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal
Provides the lean meat base that gives the sausage its firm, tender bite.
Pork
Adds fat and moisture so the mixture stays juicy when cooked.
Pig fat
Carries flavour and keeps the cakes moist by melting during frying.
Coarse sea salt
Seasons the meat and helps draw out proteins so the mixture binds together.

The step that matters

Forming and frying the cakes. Cakes thicker than about 1 inch may cook through slowly and dry out or brown unevenly on the outside. Keeping them thin and frying in a little butter over moderate heat helps them cook evenly and brown well.

Swap the mace

How well each one fits the dish's main ingredients (veal, pork, pepper, nutmeg, butter):
