Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Partridges
The main protein, which the filling is packed into and roasted.
Mushrooms
Supply moisture and savoury flavour to the stuffing as they cook in butter.
Butter
Carries the seasonings and adds richness when melted and cooked with the mushrooms.

The step that matters

Roast for 30 to 40 minutes, or until cooked through. Partridge is a lean bird and can dry out or stay underdone in the centre. Because the stuffing sits inside the bird, the cook must check that the bird is fully cooked through rather than relying on time alone.

Swap the mace

How well each one fits the dish's main ingredients (mushroom, butter, pepper):

  1. Thymefits better
  2. Parsleyfits better
  3. Marjoramfits better
  4. Macethe original

Fit is the average pairing score against mushroom, butter, pepper. Candidates are from the same food group and used in at least 100 recipes.
