To Roast Woodcocks or Snipes

Ingredients

Directions

  1. Gently pluck the feathers from the birds without breaking the skin.

  2. Do not draw the birds; wipe them with a clean, soft cloth.

  3. Truss the birds with the head under the wing and the bill along the breast.

  4. Skewer through the thighs and tie the legs straight with twine.

  5. Suspend the birds feet downwards on a spit.

  6. Flour the birds and baste them with melted butter.

  7. Before the juices begin to drop, place a thick round of toasted, buttered bread in the pan to catch the drippings.

  8. Continue basting, ensuring the butter falls into the basting spoon.

  9. Roast the woodcocks for 20 to 25 minutes at a brisk fire; roast snipe for 15 to 20 minutes.

  10. Once done, place the toasted bread on a hot dish, dress the birds on top, and pour gravy around the bread.
