What each ingredient does

Onions
Break down to thicken the sauce and add sweetness and body.
Butter
Carries the spices and adds richness to the sauce.
Mutton or other meat
Becomes tender through slow simmering in the gravy.
Gravy
Forms the liquid base that carries the flavour and keeps the meat moist.

The step that matters

Stewing the spiced onions without burning. Onions and spices can scorch on the bottom of the pan, giving a bitter, dark taste. Stirring and keeping the heat gentle lets the onions soften and release sugars slowly, building a smooth, sweet base.
