What each ingredient does

Fresh butter
Coats the beans and adds richness and a silky, glossy finish.
Juice of half a lemon
Adds acidity that brightens the flavour of the buttered beans.
Young french or string beans
Form the main body of the dish, cooked until tender and then tossed in butter.

The step that matters

Tossing the drained beans in the butter. Beans must be drained well so excess water does not dilute the butter. If the butter separates, a little liquid helps it re-emulsify into a smooth coating.

Swap the white pepper

How well each one fits the dish's main ingredients (beans, butter, lemon, veal):

  1. Parsleyfits better
  2. Sagefits better
  3. Tarragonfits better
  4. White pepperthe original

Fit is the average pairing score against beans, butter, lemon, veal. Candidates are from the same food group and used in at least 100 recipes.
