Ingredients

Directions

  1. If young, leave the skin on; otherwise, peel the cucumbers.

  2. Slice the cucumbers and dredge them lightly with pepper and flour.

  3. Heat butter or clarified dripping in a pan until very hot.

  4. Add the cucumbers to the hot fat; do not add salt yet.

  5. When nearly done, sprinkle with coarse sea salt.

  6. Once tender, lift them out with a slotted spoon and drain well.

  7. Serve the fried cucumbers over the hash or mince.
