Feuilletage, or Fine French Puff Paste

Ingredients

Directions

  1. Break small bits of butter lightly into the flour.

  2. Add salt to the center and pour enough water to dissolve it.

  3. Mix in a little more water with the egg yolks, then gradually moisten the flour to form a smooth paste.

  4. Press moisture from the remaining butter and form it into a ball without softening it too much.

  5. If the butter is too soft, cool it in a basin of salted water for an hour.

  6. Roll the crust out square, place the butter in the center, fold the crust over, and roll it out thin.
