Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the filling

  1. Prepare the chicken as for boiling and cut it into joints.

  2. Season the chicken with salt, white pepper, and nutmeg or pounded mace.

  3. Arrange the chicken neatly in a pie dish lined with pastry.

  4. Add the halved hard-boiled eggs among the chicken pieces.

  5. Pour in enough cold water to moisten the filling.

Assemble and bake

  1. Cover the pie with a thick layer of pastry, trimming the edges.

  2. Make a hole in the center of the pastry.

  3. Decorate the hole with a roll of pastry or leaves.

  4. Bake the pie in a moderate oven at 350°F (175°C) for 1 to 1.5 hours.

Make and add the gravy

  1. Boil the back and neck bones with a bit of lean ham to make gravy.

  2. Pour the gravy into the pie after baking.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chicken
Provides the main meat, which cooks through in the enclosed pie and forms the filling.
Hard-boiled eggs
Add firm, sliceable richness and body among the chicken pieces in the filling.
Pastry
Encloses the filling and forms a crisp, browned crust that holds the pie together.
Cold water
Moistens the filling so the chicken stays juicy as the pie bakes.

The step that matters

Pouring in the cold water. Enough liquid must stay in the filling so the chicken does not dry out during the long bake, while the pastry still browns. Too little water leaves dry meat; too much can make the crust soggy.

Swap the white pepper

How well each one fits the dish's main ingredients (chicken, nutmeg, egg, ham):

  1. Cinnamonfits better
  2. Marjoramfits better
  3. Parsleyfits better
  4. White pepperthe original

Fit is the average pairing score against chicken, nutmeg, egg, ham. Candidates are from the same food group and used in at least 100 recipes.
