Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 400°F (200°C).

  2. Line a large dish with puff pastry and cover the bottom with the veal cutlet or steak.

  3. Season the meat with salt, cayenne, and nutmeg or mace.

  4. Prepare the pigeons and place a slice or ball of butter inside each, seasoned with cayenne and mace.

Assemble and bake

  1. Arrange the pigeons in the dish with their breasts facing down.

  2. Add the yolks of hard-boiled eggs between and over the pigeons.

  3. Dot the top with butter and season well with salt and spices.

  4. Pour in cold water or veal broth for gravy.

  5. Roll out the pastry cover to ¾ inch thick, seal it around the edge, and decorate it.

  6. Bake for about an hour or until golden brown.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Puff pastry
Forms a crisp, flaky crust that encloses the filling and browns in the oven.
Veal cutlet or rump steak
Lies beneath the birds, adding meaty flavour and body to the filling.
Pigeons
Provide the main meat, which cooks through in the sealed dish and releases juices.
Butter
Adds richness and moisture, basting the birds and meat as they cook.
Hard-boiled egg yolks
Thicken the filling slightly and add a rich, creamy texture.
Cold water or veal broth
Creates the gravy that forms in the dish as the meat cooks and juices mix.

The step that matters

Sealing the pastry edge. A tight seal keeps steam and juices inside the dish so the meat cooks in its own moisture and the gravy stays rich rather than drying out or leaking.

Swap the nutmeg

How well each one fits the dish's main ingredients (veal, pepper, butter, egg, mushroom):

  1. Parsleyfits better
  2. Thymefits about as well
  3. Tarragonfits about as well
  4. Nutmegthe original

Fit is the average pairing score against veal, pepper, butter, egg, mushroom. Candidates are from the same food group and used in at least 100 recipes.
