Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the base

  1. Pour boiling milk over the bread crumbs and butter in a bowl.

  2. Cover and let stand until soaked.

  3. Stir in sugar, egg yolks, candied orange rind, and nutmeg until well combined.

  4. Let the mixture cool.

Assemble and bake

  1. Pour the cooled mixture into a baking dish.

  2. Beat the egg whites until frothy.

  3. Mix sifted sugar into the beaten egg whites.

  4. Spread the mixture over the pudding.

  5. Bake in a moderate oven at 350°F (175°C) for 30 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Bread crumbs
Absorb the milk and set the body of the pudding.
Eggs
Egg yolks enrich and set the custard; whites are beaten to form a light, airy topping.
Milk
Soaks the bread and forms the custard that sets as the pudding bakes.
Sugar
Sweetens the custard and, dissolved into the beaten whites, helps stabilise the topping.
Butter
Adds fat and richness, softening the crumb and carrying flavour.

The step that matters

Beating the egg whites. Whites must be beaten until frothy before the sugar is added so they trap air and hold a light topping; underbeaten whites stay runny and sink into the custard during baking.

Swap the orange

How well each one fits the dish's main ingredients (bread, butter, milk, sugar, egg, nutmeg):

  1. Vanillafits better
  2. Figfits better
  3. Raisinfits better
  4. Orangethe original

Fit is the average pairing score against bread, butter, milk, sugar, egg, nutmeg. Candidates are from the same food group and used in at least 100 recipes.
