Green Gooseberries for Tarts
Ingredients
Directions
Fill clean, dry, wide-necked bottles with freshly gathered gooseberries before they are fully grown.
Cork the bottles lightly and wrap hay around each bottle.
Submerge the bottles in a pot of cold water and gradually bring to a boil.
Simmer gently until the gooseberries appear shrunken and scalded.
Remove the bottles and fill them with the contents of one or two bottles to avoid breaking the fruit.
Pour scalding water into the bottles to cover the gooseberries completely.
Cork the bottles tightly and seal the necks with melted rosin.
Store in a cool place.
When ready to use, pour off most of the water and add sugar as you would for fresh fruit.
