What each ingredient does

Greengages
Provide the main fruit flavour and the bulk of the marmalade.
Powdered sugar
Adds sweetness and, with heat, helps the jam thicken and keep.

The step that matters

Adding the sugar and boiling for the stated time. Sugar is added only after the fruit has cooked down, then boiled for the stated 5 to 8 minutes. Sugar and heat together make the jam set. Boiling too long can make it stiff and caramelised, while stopping too early can leave it runny.
