What each ingredient does

Calf's feet jelly
Adds body and a gelling richness that gives the punch a smooth, silky mouthfeel.
Sugar
Sweetens the punch and balances the sharp acidity of the citrus juices.
Lemon juice
Provides the main sour acidity and bright citrus flavour.
French brandy
Adds warming spirit strength and aromatic depth to the punch.
Jamaica rum
Adds rich, sweet molasses-like depth and additional spirit strength.
Capillaire
Sweetens the punch with a syrup flavoured with orange blossom.

The step that matters

Strain the mixture through a sieve. Straining removes the rinds, pulp and any solids from the steeped liquid, leaving a clear, smooth punch rather than a gritty, bitter one.
