Why it works: Almond and pistachio match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 693 recipes. Both carry alpha-pinene, which smells pine, turpentine. The science ↓

Ingredients
Directions
Prepare the spices and meat
Crush coriander seeds, half the ginger, and black pepper with a mortar and pestle, then wrap in a clean cloth.
Boil the spice bundle with meat and 2 teaspoons of salt in 4 quarts of water until reduced by half. Reserve the broth.
Mix curd, remaining black pepper, grated ginger, salt, and half the garam masala with the boiled meat.
Cook the meat and nuts
Heat ½ cup ghee in a pan with half the black cumin seeds and cassia leaves. Add onions and fry until golden.
Add the boiled meat to the pan and stir for 15 minutes until browned.
In another pot, heat ½ cup ghee and brown the pistachios and almonds, then add raisins until browned.
Cook the wheat and layer
Fry the remaining garam masala in a little ghee. Add washed and dried wheat, stirring for 7-8 minutes.
Pour in the reserved broth and boil until the water evaporates.
In a boiler, layer cassia leaves and sprinkle with remaining black cumin seeds. Add a layer of boiled wheat.
Top with the fried nuts and raisins mixture.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Wheat
- Forms the bulk of the dish and absorbs the broth as it cooks until tender.
- Meat
- Provides the main protein; boiling first makes it tender before it is browned.
- Ghee
- Adds richness and fat, and helps brown the onions, meat and nuts.
- Curd
- Its acidity tenderises the meat and adds a tangy note to the spiced coating.
- Onion
- Fried until golden to add sweetness and savoury depth to the base.
- Almonds
- Toasted in ghee to add crunch and a nutty flavour to the topping.
The step that matters
Boiling the wheat in the broth until the water evaporates. Wheat must absorb the liquid gradually without becoming waterlogged. Boiling it off fully leaves grains tender but separate, rather than sticky or mushy.
Swap the raisin
How well each one fits the dish's main ingredients (meat, wheat, ghee, almond, pistachio, pepper, ginger):
- Coconutfits better
- Limefits better
- Avocadofits better
- Raisinthe original
Fit is the average pairing score against meat, wheat, ghee, almond, pistachio, pepper, ginger. Candidates are from the same food group and used in at least 100 recipes.
