What each ingredient does

Khovva kheer
Frying in ghee and powdering gives the halwa its dense, grainy body and milky richness.
Minced meat
Provides the savoury protein base that is fried until dry, giving the halwa its main texture.
Besan
Gram flour is added late to thicken the mixture and bind it as moisture cooks off.
Egg whites
Stirred in near the end to help set and bind the halwa as it cooks.
Ghee
Fat that carries the spices, browns the raisins and almonds, and adds richness.
Onion
Cooked into the paste to add savoury sweetness and depth of flavour.

The step that matters

Removing the halwa from heat. Egg whites and starch continue to set as the mixture cools, so stopping too late can leave it dry, stiff, and tough. Removing it just before it looks fully dry keeps it moist and tender.

Swap the raisin

How well each one fits the dish's main ingredients (ghee, onion, ginger, coriander, turmeric, meat, almond):

  1. Limefits better
  2. Coconutfits better
  3. Avocadofits better

Fit is the average pairing score against ghee, onion, ginger, coriander, turmeric, meat, almond. Candidates are from the same food group and used in at least 100 recipes.
