Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Oysters
Provide the main flavor and tender bite of the sauce.
Butter
Adds richness and fat that carries flavor and smooths the sauce.
Flour
Thickens the butter and oyster liquor into a smooth, cohesive sauce.
Milk
Adds creaminess and body, mellowing the sauce's saltiness.

The step that matters

Removing from heat at the right moment. Milk proteins can curdle and the oysters toughen if the mixture keeps boiling. Pulling the sauce off the heat as soon as the oysters curl and the milk is added keeps it smooth and the oysters tender.

Swap the nutmeg

How well each one fits the dish's main ingredients (oyster, milk, butter, flour, pepper):

  1. Nutmegthe original
  2. Parsleyfits about as well
  3. Cinnamonfits about as well
  4. Thymefits less well

Fit is the average pairing score against oyster, milk, butter, flour, pepper. Candidates are from the same food group and used in at least 100 recipes.
