Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Liver
Provides the main body and rich flavour of the soup once fried and pounded.
Bread crumbs
Thicken the stock and give the soup body.
Egg yolk
Enriches the soup and adds richness and body when stirred in.
Butter
Adds fat for frying, carrying flavour and aiding browning of the liver and onion.
Onion
Adds sweetness and aroma when fried with the liver.

The step that matters

Stir in the beaten egg yolk. Egg yolk can curdle or scramble if the soup is too hot when it is added. Stirring it in off the heat, or with the soup just below boiling, keeps it smooth and evenly enriched.

Swap the onion

How well each one fits the dish's main ingredients (liver, butter, bread, pepper, egg, parsley):

  1. Shallotfits better
  2. Chivefits better
  3. Capsicumfits better
