What each ingredient does

Cod
Provides the main flesh and body of the soup as it cooks down into the stock.
Veal or white stock
Forms the liquid base that carries the flavour of the soup.
Flour and butter
Thicken the strained soup, giving it a smoother, richer body.
Oysters
Add a briny, savoury flavour and tender texture when gently simmered.
White wine
Adds acidity that brightens the flavour of the broth.

The step that matters

Simmer gently after adding the oysters. Oysters toughen and shrink when boiled hard, so a gentle simmer keeps them tender while cooking them through.
