What each ingredient does

Fowl
Gives the broth its main meaty flavor and body as it simmers.
Barley
Thickens the broth as its starch releases, and pressing it through adds body.
Egg yolk
Enriches the broth and helps it turn smooth and slightly thicker.
Onions
Add sweetness and savory depth to the broth during the long simmer.

The step that matters

Reduce the mixture to about one quart. Reducing concentrates flavor and body as water evaporates. Stirring in the egg yolk before reducing can curdle it if the liquid is too hot, so keep heat gentle.

Swap the onion

How well each one fits the dish's main ingredients (barley, carrot, thyme, parsley, marjoram, pepper, egg):
