What each ingredient does

Chestnuts
Provide the starchy, sweet base that gives the soup its body and flavor.
Breadcrumbs
Help thicken the soup and give it a smoother, fuller texture.
Hot milk
Adds richness and creaminess, softening the soup's texture.
Egg yolk
Enriches and thickens the soup, adding body and a silky finish.
Sherry
Adds aromatic depth and a touch of acidity to balance the sweetness.

The step that matters

Stirring in the egg yolk. Egg yolk thickens when heated, so adding it to a very hot soup can scramble it. Let the soup cool slightly first and stir steadily so it blends smoothly.
