Why it works: Nutmeg and thyme match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 1,907 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓

Bisghaihel Sauce

Ingredients

Directions

Make the base

  1. In a bowl, combine the white roux with the boiling milk, whisking well to avoid lumps.

  2. Bring the mixture to a boil, then reduce heat and cook gently at the side of the fire.

Add the veal and flavourings

  1. Cut the lean veal into small cubes and fry in butter with the minced onion until the veal is firm but not browned.

  2. Add the veal and onion mixture to the Béchamel sauce along with the salt, pepper, nutmeg, and thyme.

Simmer and serve

  1. Let the sauce simmer for about one hour, then strain through a fine sieve into a tureen.

  2. Dot the top with butter to prevent a crust from forming.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

White roux
Thickens the milk into a smooth sauce and gives it body.
Milk
Forms the liquid base of the sauce and carries its creamy texture.
Lean veal
Adds savoury meat flavour and body to the simmered sauce.
Onion
Adds aromatic sweetness and depth when softened in butter.

The step that matters

Whisking the roux into the boiling milk. Adding the roux to hot liquid without thorough whisking lets starch clump into lumps. Whisking disperses the flour so it hydrates evenly and thickens smoothly.

Swap the onion

How well each one fits the dish's main ingredients (milk, veal, pepper, nutmeg, thyme, butter):

  1. Potatofits better
  2. Carrotfits better
  3. Capsicumfits better
  4. Onionthe original

Fit is the average pairing score against milk, veal, pepper, nutmeg, thyme, butter. Candidates are from the same food group and used in at least 100 recipes.
