What each ingredient does

Veal stock
Provides the main liquid and savoury meaty body of the gravy.
Purée
Adds concentrated tomato flavour and body to the gravy.
Tomato juice
Adds acidity and extra tomato flavour while keeping the gravy fluid.

The step that matters

Reducing the mixture by one-fifth. As water evaporates during boiling, the flavour concentrates and the gravy thickens. Reducing too little leaves it thin and mild, while reducing too far makes it overly intense and sticky.
