What each ingredient does

Bechamel sauce
Forms the base of the sauce, providing body and a smooth, thickened structure.
Cream
Adds richness and fat, giving the sauce a silky mouthfeel as it reduces.
Very fresh cream
Stirred in off the heat to add richness and loosen the sauce to the desired consistency.
Lemon juice
Adds a small amount of acidity that brightens the flavour of the rich sauce.

The step that matters

Adding the fresh cream away from the fire. Cream is rich in fat and can separate or curdle if it is overheated, so it is added gradually off the heat. The sauce should be checked for the desired consistency as it is added, since reduction has already thickened it.
