Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Salmon
Provides the main body and flavour of the croquettes.
Egg yolks
Bind the mixture and help it set firm when cooked.
White stock
Adds moisture and savoury flavour to the paste.
Butter
Adds richness and softness to the paste.
Breadcrumbs
Form a crisp, golden browned outer coating when fried.

The step that matters

Forming a moderately stiff paste. If the paste is too wet it will not hold its shape when shaped and fried, and if too dry the croquettes will crumble. Cooling the mixture before shaping lets it firm up so it holds together in hot oil.
