Why it works: Pepper and parsley match in chemistry and in kitchens. They rank in the top 2% of all ingredient pairs, and cooks put them together in 34,122 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

Fried Whiting

Ingredients

Directions

The book says “a warm oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the fish

  1. Skin the whiting and turn the tail into the mouth.

Bread and fry

  1. Dip the whiting in flour, then in beaten egg, and finally in breadcrumbs.

  2. Fry the whiting until golden brown.

  3. For whiting aux fines herbes, follow the same frying method.

Make the gratin and bake

  1. For whiting au gratin, place chopped onions in a baking dish with wine.

  2. Season the whiting with salt and pepper, then place it in the dish.

  3. Sprinkle with parsley and mushrooms, then pour anchovy sauce over it.

  4. Top with brown bread crumbs and bake in a warm oven at 350°F (175°C) for 30 minutes until browned.

What each ingredient does

Whiting
Forms the main body of the dish, cooking up flaky and tender when fried or baked.
Egg
Binds the flour and breadcrumb coating so it adheres to the fish during frying.
Breadcrumbs
Forms a crisp, golden coating that browns during frying and baking.
Mushrooms
Add moisture and savory flavor to the gratin as they release juices while baking.
Anchovy sauce
Adds salty, savory depth to the gratin sauce that poured over the fish.
Wine
Adds acidity and moisture to the baking dish, helping flavor the onions and fish.

The step that matters

Frying the breaded whiting until golden brown. The flour, egg and breadcrumb coating must be dry and fully set before frying; if the oil is not hot enough, the coating absorbs oil and turns greasy instead of crisp and golden.
