Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Partridge
Provides the main meat, which becomes tender through slow, gentle stewing.
Cabbage
Forms the bulk of the dish and absorbs flavour from the gravy and bacon as it cooks.
Fat bacon
Adds fat and savoury flavour, basting the partridge and cabbage as they stew.
Gravy
Supplies moisture and liquid that cooks the partridge and cabbage gently in the stewpan.

The step that matters

Stew gently until the partridge is tender. Covered, gentle heat with only partial liquid lets connective tissue soften slowly. Boiling hard toughens the meat and dries the pan, so keep the heat low and the lid on.

Swap the onion

How well each one fits the dish's main ingredients (cabbage, carrot, pepper):

  1. Turnipfits better
  2. Parsnipfits better
  3. Capsicumfits better
  4. Onionthe original

Fit is the average pairing score against cabbage, carrot, pepper. Candidates are from the same food group and used in at least 100 recipes.
