Stuffed Artichokes

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat the oven to 400°F (200°C).

  2. Fill the cooked artichoke bottoms with mashed potatoes flavored with cheese.

  3. Brown the stuffed artichokes in the oven.

  4. Prepare green artichokes by cutting off the leaves close to the fond and trimming the stalk.

  5. Plunge the artichoke bottoms into boiling salted water for five minutes.

  6. Remove the fibrous choke from the center of the artichokes.

  7. Boil the artichokes until tender, then drain and pass through a sieve.

  8. Season the puree with pepper and coarse sea salt, moistening with enough white sauce.

  9. Fill the pastry patty cases with the mixture and serve very hot.
