Baked Cabbage

Why it works: Cabbage and pepper are a kitchen classic. They rank in the top 5% of all ingredient pairs, and cooks put them together in 4,081 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

Baked Cabbage

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Boil the cabbage until tender, then chop it coarsely.

  2. Rub a fireproof baking dish with butter and add a layer of cabbage.

Layer and bake

  1. Pour a little white sauce over the cabbage, sprinkle with cheese, and season with pepper and salt.

  2. Repeat the layers until the dish is full, finishing with a thin layer of breadcrumbs and a few small bits of butter on top.

  3. Bake in a 350°F (175°C) oven for 30 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cabbage
Forms the bulk of the dish and softens into a tender, mild base once boiled.
White sauce
Adds moisture and a creamy texture that keeps the layers from drying out in the oven.
Grated cheese
Melts into the sauce and browns on the surface, adding savoury flavour and richness.
Breadcrumbs
Form a crisp, golden topping that contrasts with the soft layers beneath.
Butter
Adds fat and richness, and helps the breadcrumb topping brown.

The step that matters

Repeat the layers until the dish is full, finishing with a thin layer of breadcrumbs and a few small bits of butter on top.. Keeping the breadcrumb and butter topping thin lets it brown evenly and crisp in the oven, while the sauce and cheese layers stay moist beneath rather than drying out.

Swap the cabbage
