What each ingredient does

Celery
Is the main vegetable, softened by simmering and then fried for texture.
Eggs
Bind the bread crumbs to the celery so the coating holds during frying.
Bread crumbs
Form a crisp, golden coating when fried in butter.
Butter
Conducts heat for frying and promotes browning and flavour in the crust.
Bacon
Adds savoury, smoky flavour to the stock the celery simmers in.

The step that matters

Simmer gently until the celery is tender. Gentle simmering softens the fibrous celery evenly without breaking it apart. The celery must be tender before coating, because the crumb crust will not soften it further during frying.

Swap the celery

How well each one fits the dish's main ingredients (ham, pepper, egg, bread, butter, tomato, sauce):

  1. Parsleyfits better
