Why it works: Celery and pepper match in chemistry and in kitchens. They rank in the top 5% of all ingredient pairs, and cooks put them together in 16,012 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

Meat Dumplings

Ingredients

Directions

  1. Remove all bone, gristle, and skin from the meat or fish.

  2. Mix the meat with minced or sliced onion and green vegetables.

  3. Season the mixture with pepper, coarse sea salt, and Worcestershire sauce if desired.

  4. For thin dough, wrap a tablespoon of the mixture in a piece of dough and steam for about 1 hour.

  5. For spongy dough, leaven the flour with yeast or baking powder and roll it to ¼ inch thick.

  6. Steam the spongy dumplings until they expand to double thickness.
