Ingredients

Directions

  1. Grease narrow and deep dariole molds with butter.

  2. Garnish the bottoms with truffle slices and coat the sides with chicken forcemeat.

  3. Prepare scrambled eggs with asparagus heads and diced truffles, keeping them soft.

  4. Add one raw beaten egg for every four scrambled eggs to the mixture.

  5. Fill the molds nearly full with the egg preparation.

  6. Cover the eggs with a layer of forcemeat.

  7. Poach in a bain-marie for 15 minutes over low heat.

  8. Turn out the molds onto a dish and surround with a drizzle of clear poultry brown sauce.
