Why it works: Pineapple and sugar are a kitchen classic. They rank in the top 19% of all ingredient pairs, and cooks put them together in 4,841 recipes. Both carry 2-nonenal, which smells fatty, green. The science ↓
Flan Op Pineapple
Ingredients
Directions
The book says “a moderately cool oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.
Prepare
Prepare the flan.
Bake the flan as you would for Apple Flan.
Cut the pineapple into dice and remove all specks.
Make the custard
Strain the syrup and place ½ cup of it in a saucepan with 2 teaspoons of sugar.
Bring to a boil, then simmer for 3-4 minutes.
Let it cool slightly, then add the egg yolks and cook gently, stirring, until thickened.
Assemble and bake
Place the pineapple in the prepared flan.
Cover with the custard.
Spread the whipped egg whites on top.
Bake in a moderate oven at 350°F (175°C) until the meringue hardens and browns slightly.
Serve
Serve hot or cold.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Pineapple
- Provides the fruit flavour and moist filling in the flan.
- Eggs
- Egg yolks thicken the custard, and whipped whites form the browned meringue topping.
- Castor sugar
- Sweetens the syrup and custard and helps the meringue brown.
- Short crust
- Forms the pastry shell that holds the filling during baking.
The step that matters
Cooking the egg yolks into the custard. Egg yolks thicken when heated gently. If the custard boils or heats too fast, the eggs can scramble and turn grainy, so stir constantly over low heat until it coats a spoon.
