Polish Tartlets

Oven, in the book's wordsA moderately hot oven

Ingredients

Directions

The book says “a moderately hot oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

  1. Roll out the puff paste thinly.

  2. Cut it into 2.5-inch squares.

  3. Moisten each corner of the squares.

  4. Fold the corners over to meet in the center.

  5. Cover the join with a small round of paste.

  6. Bake in a moderate oven at 350°F (175°C) for about 15 minutes.

  7. When cool, place a little raspberry jam at each corner and sprinkle coconut on it.

  8. Place a little apricot jam at each corner and sprinkle finely grated pistachio on it.
