Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rice
Absorbs the milk and forms the thick body that sets once cooled and cut.
Eggs
Bind the mixture and help it set firm when cooled.
Milk
Cooks into the rice, giving it a soft, creamy texture.
Butter
Adds richness and a smooth mouthfeel to the mixture.
Sugar
Adds sweetness and helps the fritters brown when fried.
Orange marmalade
Adds sweetness, citrus flavour and some moisture to the mixture.

The step that matters

Let the mixture cool fully before cutting. A warm, soft rice mixture cannot hold its shape. Cooling lets the starch and egg set so the strips or squares keep their form when dipped in batter and fried.

Swap the orange

How well each one fits the dish's main ingredients (rice, sugar, butter, egg, milk):

  1. Vanillafits better
  2. Coconutfits better
  3. Figfits better
  4. Orangethe original

Fit is the average pairing score against rice, sugar, butter, egg, milk. Candidates are from the same food group and used in at least 100 recipes.
