Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Yellow pear tomatoes
Provide the fruit that becomes tender and translucent in the preserve.
Sugar
Draws moisture out of the tomatoes and, once boiled, thickens the syrup and preserves the fruit.
Preserved canton ginger
Adds spicy aroma and a sweet-hot flavour that balances the sugar.
Lemons
Add acidity that brightens the flavour and helps the preserve set.

The step that matters

Cook until the tomatoes have a clarified appearance. Cooking in the thickened syrup slowly replaces the fruit's water with sugar. Stopping too early leaves the tomatoes cloudy and the syrup thin, while overcooking can make the fruit tough and dark.

Swap the tomato

How well each one fits the dish's main ingredients (pear, sugar, ginger, lemon):

  1. Sweet potatofits better
  2. Carrotfits better
  3. Capsicumfits better
  4. Tomatothe original

Fit is the average pairing score against pear, sugar, ginger, lemon. Candidates are from the same food group and used in at least 100 recipes.
